Forgiving for the novice baker
My wife allowed me to knead some dough she was working on. The dough felt alive in my hands and I knew I wanted to bake my own. She gave me her old copy of the
Tassajara
bread
book
. I made the Banana Sandwich bread. As a first time bread baker I know I made a number of "mistakes." I ended up with delicious hot loaves and our house is perfumed with the orange peel and cinnamon that was in the dough. When Ed Brown writes that his recipes have a wide margin for error he is right. This is a wonderful book, written in a warm and gentle spirit.
For the novice baker this book is just the thing. My advice - don't use a machine to handle the dough, at least at first. I feel it's important to know how the dough feels at the different stages of preparation. The kneading is my favorite part! Also - study the basic recipe, read it through a few times before starting if you are a beginner.

A Must Have Bread Book
I've owned this
book
for many years and it, along with Laurel Burch's
Bread
book, is my best bread book. Besides super bread recipes it has the best-ever whole-wheat pancake recipe along with many muffin,pastry and quick bread recipes. This book won't disappoint.
Incomparable, easy recipes
I have tried all kinds of tricks and gimmicks to make
bread
work at home, particularly bread baked in a pan that rises up high and can be used for a variety of things (I wanted something to replace the basic bread you buy or toast and sandwiches) and was never able to quite make it work to my satisfaction before I tried the recipe in this
book
. It hits on the few basic principles that makes bread work, while giving you room for expression, and expanding the basic recipe into lots of useful and interesting variations. I make the basic recipe at home almost every week now, and it consistently works, rising high above the pan to make big beautiful sliceable loaves. Also delicious.

Bread joy
My father's had a copy of this
book
probably since its first printing. It's falling apart at this point. When I started taking an interest in cooking, I read the book cover to cover. It's a delight to read. Brown's style is lighthearted and effusive, giving you a lot more than just a list of recipes. But best of all, it's simply a great cookbook. My father's pancakes that he's made since I was a kid were taken from this book, and to this day, I have never tasted their equal.
